Avocado guacamole recipe
This recipe is avocado guacamole at its simplest. It can be served with tortilla chips, or can be put out as a spread to add onto nachos, fajitas, tacos or burritos, whether homemade or prepared. While some guacamole recipes call for sour cream, this version is dairy-free. Its fresh taste can’t be beat!

Instructions
When you shop for avocados, squeeze them gently to make sure they are somewhat soft, making sure there are no individual soft spots which might indicate that there are unusable parts. If you find only hard (unripe) avocados, you can buy them and leave them out to ripen for 1-3 days.
To get the avocado out of its hard skin, hold it on a cutting board and slice it down the middle lengthwise, then turn and continue to slice the middle all around. Pull the two halves apart. In one half will be the pit. Pry it out with a spoon.
If the avocado has any brown portions, scrape them out with your spoon and discard. Then, one at a time, hold a half avocado over your mixing bowl and squeeze out the avocado. Scrape any that remains out with your spoon.
Now add in the salsa, lime juice and salt and mash all ingredients together with your fork until smooth. Taste the dip for salt and add more if necessary, mixing thoroughly again.
If you wish to add cilantro, wash it carefully and pinch off any wilted parts. There is no need to remove the stems – they are also full of flavor. Hold the cilantro down on the cutting board and chop it fine with your sharp knife. Stir one tablespoon into the dip, and reserve the remainder as a garnish.
Your guacamole dip will begin to turn brown on the top after about one hour. Before serving, mix again. The brown part will not be noticeable.
Transfer the guacamole dip to a serving bowl and use a paper towel to wipe off the inner edges of the bowl. If desired, sprinkle the remaining chopped cilantro onto the top of the dip.
