Chips and Guacamole Recipe
When it comes to appetizers, we’ve seen it all, haven’t we? We’ve had guacamole of all flavors. We’ve had it with blue cheese, cream cheese, mayo, red peppers, we’ve had it as dressing, as sandwich topping, as chip dip, so what it really comes down to isn’t so much doing something different as doing something really, really well. For some, that means making everything homemade, from the guacamole to the corn chips themselves. Here’s a guacamole recipe to make a great chip and dip combo.
Chips and Guacamole Ingredients
2 Avocados
1 Tomato
1/4 Cup Onion
1 Tablespoon Lemon Juice
1/2 Teaspoon Salt
3 Cloves Garlic (more or less to your preference)
Cilantro
10 Corn Tortillas
1 Quart Oil
Instructions For Tortilla Chips
We want to make the corn tortilla chips first so that they have time to dry, and so that we can serve the guacamole fresh and cold. If you have a cast iron skillet or something that you can deep fry in, get the oil ready while cutting the tortillas up into triangles, like slicing a pizza.
Once the oil is ready, start putting your little chips in. Once they’re golden brown and a bit brittle, they’re ready to dry, so take them out with your tongs and put them on a paper towel. Some people like to put them in a strainer laced with paper towels and placed over a plate to thoroughly de-grease them.
Before you’ve allowed them to dry all the way, shake your two tablespoons of salt on them and give them a good shaking. Allow these to dry while you prepare the guacamole dip.
Instructions For Guacamole
To make guacamole, take your avocados and peel, pit and mash them. Now mix in your salt and lemon juice. Mince your garlic, dice your onions and mix that in, now. Dice your tomato and put it in last, mixing gently so as not to crush the tomato cubes.
Chop up your cilantro and sprinkle it on top as a garnish. Put it in a bowl in the center of a plate of your chips, and you have a great appetizer that will drive your guests wild.
Chips and Guacamole Tips And Variations
What many people like to do is offer a few flavors of both chip and guacamole. You can sprinkle some red pepper on your chips with the salt and offer it with red pepper guacamole for those who want some spice, and then offer some garlic-free, onion free guacamole and chips to those who want something a little milder.
