  • Two TABLESPOONS of finely chopped cilantro leaves
  • Two TEASPOONS of finely chopped yellow onion
  • Two TEASPOONS of finely chopped jalapeno peppers
  • Two TABLESPOONS of cored and finely chopped plum tomatoes
  • Two TEASPOONS of freshly squeezed lime juice
  • Two large, ripe avocados
  • Kosher or coarse salt to taste

The cilantro, onion, pepper and tomato should be prepared first. Avocado tends to oxidize and turn brown once it is exposed to air, so this ingredient should be prepared last.

Once the other ingredients are chopped and set aside, peel the avocado and remove the seed. The easiest way to do this is to cut the avocado in half lengthwise around the large round seed, then twist the halves apart, remove the seed, and scoop the fruit away from the rough outer skin. The avocado should be soft and easy to remove with a spoon and will have a yellowish green color and a creamy texture.

Immediately squeeze the lime juice onto the avocado to prevent discoloration, and mash the fruit with a fork. Don’t worry about mashing it all smooth. When the avocado is mashed, blend in the chopped ingredients and salt to taste.
