Jamie Oliver Guacamole Ingredients
4 Ripe avocados, pitted
1 Cup of fresh garden tomatoes, finely-diced
¼ Cup of Vidalia onions, finely-diced
¼ Cup of radishes, finely-diced
¼ Cup of banana peppers, finely-diced
1 Tbsp. of jalapeño peppers, finely-diced
½ Cup of fresh cilantro, chopped
½ Cup of fresh parsley, chopped
¼ Cup of chipotle, finely-diced
½ Cup of red bell peppers, finely-diced
2 Tbsp. of fresh, diced garlic
¼ Cup of lime juice
2 Tbsp. of fresh tomato juice (from the tomatoes that were diced)
1 Tbsp. of red wine vinegar
1 Tbsp. of sea salt
2 Tsp. of extra virgin olive oil
1 Tbsp. of cracked black pepper
1 Tsp. of granulated sugar
Directions
In a medium-sized mixing bowl, mash the fruit of the avocados until a creamy mixture is formed. Mix in olive oil, granulated sugar, red wine vinegar, and the tomato juice and stir well. Add the lime juice and stir until mixed in.
In a separate, small mixing bowl, add the onions, diced tomatoes, radishes, banana peppers, jalapeño peppers, cilantro, parsley, chipotle, and garlic. Stir these until mixed lightly and pour entire mixture into a blender or food processor. Blend for a few seconds until the mixture takes on the form of a sauce. Pour this mixture into the bowl with the avocado mixture and stir with a spoon or fork for one minute until well mixed. Add the sea salt and cracked black pepper and stir.
